Recipe: Hot & Cold French Salad

French people see food as something to enjoy and savor . Maybe that is the key to them being one of the longest living nations. The French cuisine  is rich and filling, with many dishes using cream-based sauces. It is also considered as one of the most romantic cuisines in the world, even beating the Italian cuisine! That is why we decided to share with you an authentic French recipe perfect for a summer dinner with your loved one – Hot & Cold Salad, an aromatic dish rich in flavor made for pure enjoyment…

  • 10 oz of goose livers (or chicken livers as substitute)
  • 1 bunch of rocket salad (or lettuce)
  • 1 red onion
  • 1 handful of baked almonds
  • 1 medium sour apple

Dressing:

  • 1 tbs of Dijon Mustard
  • 1 tbs balsamic vinegar
  • 4 tbs olive oil
  • a pinch of salt and pepper
  • Provence spice mix

For frying:

  • 1 tbs butter
  • 1 tbs olive oil

 

You would like to prepare the dressing first as it needs some time to “rest” before serving. Mix the mustard, balsamic vinegar, salt and pepper and than slowly add the olive oil by stirring constantly until its creamy. Add the spices.

Bake the almonds (without adding oil), cool and slice into halves. Wash and dry the rocket or lettuce. Cut the apples into cubes. Cut the onion into stripes  than stir it shortly in the butter and olive oil. Remove the onion from the pan and in the same oil stir fry the goose or chicken livers just for a short period of time, until they get a nice color.

Arrange the dish by adding the onion, apple cubes, almonds and fried livers over the fresh salad. Mix the dressing once again before pouring it over the salad. Serve  immediately to enjoy the hot & cold effect. Oh, and don’t forget a glass (or two) of quality French wine! Bon Appetit!
