  • Ice Cubes
  • One cup half and half
  • 1/2 salt (big granules)
  • 2 tbs sugar
  • 1/2 tbs vanilla extract
  • 1 pint size zip lock bag
  • 1 gallon size zip lock bag
  • chocolate chips, cereal pieces, fresh fruits

Put the sugar, half and half, and vanilla extract in the pint size zip lock bag and seal it. Put the salt and ice in the gallon sized bag, then place the sealed smaller bag inside as well. Seal the larger bag. Shake the bags until the mixture hardens for about 5 minutes. Feel the small bag to determine when it’s done. Take the smaller bag out of the larger one, add mix-ins and you got yourself a tasty ice cream!

  • 2 cups fresh raspberries

Blend raspberries in a food processor until smooth. Press raspberry puree through a fine wire-mesh strainer into a large bowl, discarding solids. Add the sugar, buttermilk, and vanilla extract to bowl, stir until well blended. Pour the mixture into freezer container of a 4-quart ice-cream maker, and freeze according to manufacturer’s instructions.

  • 3 cups of milk
  • 1 cup heavy cream
  • 6 egg yolks
  • 1 cup sugar
  • 2/3 cup extra-virgin lemon olive oil

Whisk together the milk and cream in a saucepan over medium heat. Cook the mixture until you notice bubbles forming on the edges. Beat the eggs and sugar using an electric mixer on medium speed for 5 minutes. Reduce the speed and start drizzling the olive oil. Beat until combined. Slowly add the hot milk mixture. Now place the pan over medium-low heat and cook with constantly whisking about 15 minutes. Strain the custard through a fine-mesh sieve into a bowl and put the bowl into a larger one filled with ice cold water until it cools. Cover the bowl and put it into a cooler for at least 2 hours. Transfer the custard to an ice cream maker and freeze according to the manufacturer’s instructions.

  • 2 mangoes
  • 2 nectarines
  • 1/2 cup water
  • 3/4 cup sugar
  • 1/2 cup sour cream
  • 1 cup heavy cream
  • 1/4 teaspoon vanilla extract
  • a few drops of freshly squeezed lemon juice

Pill, remove pit and chop the mangoes and nectarines. Cook the fruits with the water in a saucepan over medium heat for 10 minutes. Remove from heat and stir the sugar. Let it cool at room temperature. Puree everything that is in the saucepan with sour cream, heavy cream, vanilla, and lemon juice. Chill the mixture in the refrigerator and then freeze in your ice cream maker according to directions.

  • 8 oz softened Cream Cheese 
  • 8 oz frozen whipped topping, thawed
  • 1 can sweetened condensed milk

  • 1 can cherry pie filling

Put the cookies and butter in a food processor and pulse until crumbly. Using a hand mixer whisk together the cream cheese, whipped topping, sweetened condensed milk, yogurt, and vanilla extract. Now pour the cookie mixture into the center, then the cherry pie filling on top. Using a rubber spatula  gently fold in the cookies and pie filling, with only two or three strokes. Pour into a freezer container, cover and freeze for at least 4 hours.

  • 3/4 cup sugar
  • 2 tbs cornstarch
  • 1 tbs instant espresso
  • 1/8 tbs salt
  • 2 cups milk
  • 1 cup heavy whipping cream
  • 1 egg yolk
  • 1 1/2 tbs vanilla bean paste
  • 1 cop chopped pecans
  • 2 ounces chopped semi sweet chocolate

In a large heavy saucepan mix the sugar, cornstarch, espresso and salt than add the milk and whipping cream slowly. Cook over medium heat for 10-12 minutes. Remove from heat.  Whisk the egg yolk than gradually add 1 cup oh the hot cream mixture. Add the yolk mixture into the remaining hot cream mixture. Whisk in the vanilla beans paste and let it cool. Cover with plastic wrap and chill 8-24 hours. In the meantime preheat the oven to 350F and bake the pecans for about 8 minutes. Let them cool. Pour chilled cream mixture into freezer container of a 1 1/2-qt. electric ice-cream maker, and freeze according to manufacturer’s instructions. When ready stir in pecans and chocolate than put in an airtight container and freeze. 

7. Chocolate-Almond Ice Cream

  • 1 can sweetened condensed milk
  • 1 can evaporated milk
  • 2 cups whole chocolate milk
  • 2/3 cup chocolate syrup
  • 3/4 cups sliced toasted almonds

Mix together everything besides the almonds. Cover with plastic wrap and chill for 30 minutes. Pour milk mixture into freezer container of a 1-quart electric ice-cream maker, and freeze according to manufacturer’s instructions. When ready, place the container in the freezer for 15 minutes. Remove and mix in the almonds. Pour the mixture into an airtight container and freeze for 1 1/2 hour.
